Almond Energy Ball Recipe

Swap your white flour for almond flour! These Almond No-Bake Energy Balls are simple & easy. Indulge your sweet tooth the healthy way!

Ingredients

2 cups almond flour (you can substitute tigernut flour or walnut flour)

1 tsp pure vanilla extract *homemade if possible

5 tsp maple syrup (or honey)

ΒΌ tsp iodize sea salt

1 tbsp coconut oil (melted)

2 tbsp organic dark chocolate chips or cacao nibs (85% or greater)

 

Instructions

  1. Combine all ingredients except for the dark chocolate chips in a large bowl and mix until well combined. The dough should be moist, so add a dash of water if needed.
  2. Stir in the dark chocolate chips
  3. Roll the dough into 12 small balls
  4. Refrigerate 1 hour and ENJOY!

OPTION #1 – you can also flatten the almond-no-bake-energy-balls into cookie shape and bake these for deliciously warm cookie-like goodness. Bake in the oven at 325 degrees for 6-8 minutes. Let cool slightly and enjoy!

OPTION #2 – you can also roll them in loose cacao powder for a chocolate-y treat or melt a bar of 85% organic chocolate and drizzle over top of the balls. Refrigerate and enjoy!
