With only four ingredients, this recipe is a quick and easy way to bring apricots into your life. Enjoy their high potassium, heart-energy benefits, with a no-bake, keto-friendly recipe for all ages.

Ingredients

One cup dried apricots

½ cup sulfur-free dates, pitted

½ cup organic almonds

¼ cup coconut, finely shredded

Splash of maple syrup

 

Instructions

Place all ingredients in a food processor until well combined.

Line a 8x6 or similar, rectangle baking pan with parchment paper (ungreased)

Press the mixture into the pan about ½ inch thick

Chill in the freezer for at least 30 minutes before cutting into bars.

You can store these for up to 1 week in the refrigerator in an airtight container (be sure to use glass to avoid plastic toxicity), or in the freezer for up to one month.
